| Lobster, Gouda and Chive Quiche |
1 cup shredded Gouda cheese
3-4 Tablespoons cup minced chives
9-inch pastry shell, unbaked
5 eggs
1 cup nonfat milk
1/3 teaspoon salt
1/8 teaspoon cayenne pepper
dash of Crystals Hot Sauce (or any hot sauce you have on hand)
dash of parsley flakes
I like to use Whole Foods brand 100% organic whole wheat pie crusts. You'll find them in the freezer section. I know they offer a gluten-free brand, too. If that's not your thing, just buy the kind you prefer (any brand works.)
I found cooked, frozen lobster tails at Costco in the freezer section. That's what I used for this recipe. You can find cooked lobster at any local seafood market, or grocery store.
Tip: If you're using frozen lobster, place what you need in cold water for 10 minutes then drain. Now it's ready for your recipe.
Sprinkle lobster, cheese, and onion into pastry shell. Beat eggs. Whisk milk, seasonings and parsley flakes into the eggs. Pour mixture into a pastry shell. Bake for 15 minutes at 425 degrees (F), then reduce heat to 300 degrees (F). Bake 35 to 45 minutes or until knife inserted one inch from the edge comes out clean. Let quiche stand 10 minutes before serving.
